In honor of Fr. Paul Mark Schwan, Abbot of New Clairvaux, this wine was made from Vina Petite Sirah and Napa Zinfandel. It has a medium carmine red color with jammy red fruit, red cherry, toasted oak, vanilla and chocolate aromas and flavors. Aged for 3 years in the barrel and 1 year in the bottle, it has developed a very complex bouquet.
